Adjarian khachapuri, the dish ordered most

It is what our fireplace sends out most often. A little about it — and how to eat it.

An Adjarian khachapuri from above on a round wooden board — molten cheese, an egg yolk at the centre, butter and a glass of orange juice beside it on a plank table.

Adjarian khachapuri is baked in our fireplace, and it is the dish ordered most at Leuville. The boat of dough is filled with Imeretian cheese and sulguni, and as it comes out of the fire we add butter and an egg.

How to eat it

Stir the egg and the butter through the hot cheese. Then tear pieces off the crust and dip them in.
