Out of the port of Batumi

In March the government of the Democratic Republic of Georgia was forced into exile, sailing from the port of Batumi. It is the same city this room stands in.

1922

A château at Leuville

The next year they bought a château at Leuville-sur-Orge, a small village south of Paris. For decades it was the centre of Georgian émigré life in France.

Today

Back in Batumi

Our name points at that village, and at the port the journey began from. On our counter, Georgian bread from the fireplace and French pastry sit side by side, like two halves of one story.

The thing everything comes out of

The khachapuri, the kubdari, the lobiani and the pizza all come out of the same fire, and a whole section of the menu is built around it. Our own description calls it Leuville’s distinctive symbol, which is less a marketing line than a description of the floor plan.

Georgian bread, French pastry

The bakery and the kitchen share a room, so the same counter carries both khachapuri and croissants. The fireplace dough is made with Italian Caputo flour — which you can check rather than take on trust, because it is named in the ingredient line of every dish that uses it.

What is baked in the fireplace?

The khachapuri, the kubdari, the lobiani and the pizza all come out of it. Our own description calls the fireplace Leuville’s distinctive symbol, and a whole section of the menu is built around it.

What is Adjarian khachapuri, and how do I eat it?

A boat of bread filled with cheese, with butter and a raw egg dropped in as it comes out of the fireplace. Stir the egg and the butter through the hot cheese, then tear pieces off the crust and dip them. It is the dish Batumi is known for and the one ordered most often here.

What flour do you use?

Caputo. It is named in the ingredient line of the dishes that use it, so you can check for yourself rather than take our word for it.

A little about our Batumi

Batumi is the capital of Adjara, on the Black Sea. Adjarian khachapuri is this region’s own dish, which is where its name comes from. And the journey our name remembers began here too, in the port, in 1921. The sea, the khachapuri and the story all meet here, in Batumi.
